Lemon Pepper Roasted Whole Fillet of Salmon

One sheet pan dinner! This salmon dish is cooked from frozen & couldn’t be easier. Served with an ancient grain rice blend & broccoli.

Ingredients: Atlantic Salmon, Butter, Lemon Pepper Seasoning, Broccoli,Ancient Grain Blend (wholegrain wild rice, spelt, oats, barley, rye, wheat)

Cooking: 30 minutes; Oven & Stovetop

  1. Preheat oven to 375 °F.
  2. Line a baking sheet with parchment paper or tin foil (or grease with nonstick cooking spray/butter
  3. Unwrap salmon and place in the middle of the baking sheet. Arrange broccoli around salmon, drizzle with oil and season with salt & pepper.
  4. Bake for 20 minutes until internal temperature of salmon reaches140°
  5. Meanwhile, combine ancient grain blend with water (2 cups for full, 1 cup for half) in a pot (optional: add pinch of salt for flavour).
  6. Bring to a boil, reduce heat to low and cover. Cook for 10-15 minutes until all liquid is absorbed.
  7. Serve and enjoy!
