Make this as spicy or mild as you like it! Tender chicken breast strips are tossed in a homemade Cajun spice then sautéed with red and green peppers. Served over your choice of white, gluten free or whole wheat pasta.
Ingredients: Cajun Spice, Red Pepper, Green Pepper, Mushrooms, Green Onion, Dried Basil, Lemon Pepper, Salt, Garlic Powder, Pepper, Cream, Chicken Strips, Penne Pasta, Shredded Parmesan Cheese
Cooking:Stovetop; 20 Minutes
Bring 8 cups of water (4 cups for a half order) to a boil in a medium pot, add pasta at step #5.
Meanwhile, heat 2 tsp of oil in a large skillet over medium-high heat.
Add chicken to skillet and sprinkle Cajun seasoningover chicken. (Using all the spice will make the dish very spicy. Use desired amount of spice!). Sauté the chicken until no longer pink inside, about 5 minutes. Turning occasionally.
Add pasta to boiling water and cook for 10-12 minutes until pasta is tender.
Add the vegetables to the skillet with the chicken and sauté for 2-3 minutes.
Add the cream sauceand heat through.
Drain pasta and toss with chicken, vegetables and sauce. Top with parmesan cheese and serve immediately.
