Mexican Stuffed Chicken with Spanish Rice


Ready to bake. Manitoba raised boneless chicken breasts are stuffed with a mildly spiced filling, then topped with red pepper jelly & bacon. A must try this season!

Cooking: 30 minutes; Oven & Stovetop 

1. Preheat oven to 375°F. Remove the lid, bags

and cellophane from the pan.

2. Place the pan of chicken in the preheated oven,

uncovered and cook for about 30 minutes.

Broil for the last 3-4 minutes to crisp the bacon.

Cooked chicken will register an internal temperature 165°F.

3. Meanwhile, bring 3 cups of water (1.5 cups for half orders)

to a boil over high heat in a medium pot. Add the seasoned

rice to the water, stir and cover. Reduce heat to low, allow

to cook for 20 minutes until rice is tender and liquid is

absorbed. Fluff with fork.

4. Supper is ready, enjoy!
