Ingredients: Vegetable Oil, Garlic, Onion, Curry Powder, Cinnamon, Brown Sugar, Salt, Tomatoes, Chickpeas, Carrot, Red Pepper, Fresh Cilantro, Coconut Milk, Fresh Spinach
Cooking: 35 minutes; Stovetop
In a large pot, add oil and heat.
Add onion mixture and sauté for 5 minutes until onions are translucent.
Add diced tomato/chickpea/vegetable mixture along with water (3 cups for full, 1.5 cups for half)
Bring to a boil & simmer for 20 minutes. Season with salt and pepper to taste.
Add coconut milk & spinach. Combine and stir until spinach is wilted.
