Bacon Wrapped Pork Medallions with Louise's BBQ Sauce

Perfect for grilling! This entire meal is ready to cook on the BBQ or in the oven. Pairs perfectly with a fresh salad.

 

Cooking: Grill or Stovetop/Oven; 45 minutes.

Grilling Instructions:
1. Heat grill to medium high heat. Immediately place tin foil pouch(es)
on grill. Cook for 20 minutes before adding pork to grill.
2. Place pork medallions on grill, brush with BBQ sauce. Cook for
3-4 minutes until meat releases naturally from grill. Flip and brush
again with BBQ sauce.
3. Continue flipping and cooking for another 5-6 minutes until pork
reaches internal temperature of 150F.
4. Remove pork and potatoes from grill. Open pouch of potatoes.
Serve & Enjoy!
Stovetop / Oven Instructions:
1. Preheat oven to 400F. Place tin foil pouch(es) on a baking sheet
& bake for 30 minutes.
2. Once potatoes have been cooking for 15 minutes, heat a large
oven safe frying pan on medium high heat.
3. Once hot, add pork to pan, searing one side of each medallion
thoroughly (looking for browning). Flip pork and brush with
BBQ sauce. Place entire pan in oven. Bake for 10-12 minutes
until pork reaches internal temperature of 150F.
4. Remove pork and potatoes from oven. Open pouch of potatoes.
