Summer Vegetable Risotto with Burrata

Classic parmesan risotto with roasted summer vegetables and topped with creamy burrata cheese. This dish shines on its own, but would also work as a delicious side dish. 

Serves 3-4. 

Ingredients: Arborio Rice, Onions, Garlic, White Wine, Butter, Mushrooms, Eggplant, Green Onions, Thyme, Rosemary, Parsley, Vegetable Stock, Burrata Cheese, Olive Oil, Salt and Pepper.
